Lorraine & Spices with Le Gruyère AOP cheese tartlets

  • 200 g
    flour
  • 0.5 tsp
    of salt
  • 75 g
    butter
  • 30 ml
    milk
  • 200 g
    leeks
  • 1
    onion
  • 1
    garlic cloves
  • 180 g
    bacon, cut into matchsticks
  • 450 ml
    cream
  • 3
    eggs
  • 0.5 tsp
    mustard seeds
  • 1 tsp
    of chilli flakes
  • 0.5 tsp
    of ground coriander seeds
  • 0.5 tsp
    Ground cumin
  • 300 g
    Gruyère AOP
  • 1 pinch
    of salt
  • 1 pinch
    of pepper
  • 1 pinch
    freshly grated nutmeg (optional)

Preparation

Lorraine & Spices with Le Gruyère AOP cheese tartlets

  1. Mix the flour and salt in a bowl to make the pastry. Cut the chilled butter into pieces, add to the bowl and rub in by hand to form a consistent crumbly mixture. Add in the milk and knead (not too hard) until a smooth pastry is formed. Roll the pastry flat, cover with foil and allow to cool for 1 hour.
  2. Peel the garlic and onions and chop finely. Cut the bacon into strips and the leek into fine rings. Fry off in a pan so that the ingredients blend together. Season lightly with salt and pepper.
  3. Now roll out the pastry dough in a round shape about 3mm thick. Use a spatula to lift the pastry from the worktop and shape to create an edge of around 3cm. Prick the pastry base with a fork several times. Add the fried vegetables, grated Le Gruyère AOP and bacon to the pastry base and press down gently.
  4. Pre-heat the oven to 200°C (fan). Mix the full-fat cream, egg and spices together. Season the glaze and carefully pour over the diced bacon. Bake in the centre of the oven for around 30 to 40 minutes. Remove from the oven, let stand for around 5 minutes and then serve.

Different spices may be used to suit your own tastes. Spice mixes such as curry or harissa are great options – simply try them out for yourself. Herbs like thyme work well too.
