Courgette flowers with shaved Gruyère AOP

Ingredients

  • 120g Gruyère AOP, grated by hand
  • 16 courgette flowers
  • olive oil
  • fleur de sel
  • pepper
  • Espelette pepper powder

Preparation

Preheat the oven to 180°C
Quickly rinse the courgette flowers and open them carefully to remove the pistil
Place the courgette flowers on a baking tray lined with parchment paper
Using a brush, coat the flowers with olive oil and season
Put in the oven for 4 to 5 minutes before removing the tray, placing on a rack and dusting the flowers with Gruyère AOP
Just before serving, flash the courgette flowers quickly under a hot grill
Sprinkle with a pinch of Espelette powder and serve

 

Tips & Tricks :
Choose male over female courgettes flowers: the male flowers have narrow stems and will not go on to make a courgette, unlike the female flowers which have a swollen stem that resembles the future courgette
